Hadn’t made cupcakes in weeks and weeks; this morning (granted it was 6.30am) was possibly the most disastrous cupcake making session. Oven at 170°C wasn’t actually 170°- over cooked but pale cakes. Second batch, upped the temp, cakes were fine, rushed the icing, icing melted on cake. Spatula (which I got at the supermarket and is horribly shaped) toppled on to other cupcake. In the end, very few looked decent. And how heavy is a hand mixer??! Ugggh .
