Right, dinner plans got a bit sidetracked as the husband ended up bringing home fried noodles / kway teow goreng from the local Malaysian outfit near ours.
I kind of preferred my own homemade kway teow mine was springier…! #snob but am happy for the change anyway, I wasn’t the one cooking! #win
If you’re unfamiliar, these noodles are wide, flat, and made with rice flour (gluten free?), then fried up with bean sprouts, bok choy, prawns/shrimp, egg, little tofu cubes and various soy sauces. It’s southeast Asian Chinese in origin but one gets variants of it from different ethnic groups across Malaysia and Singapore, Thailand, Indonesia and possibly the Philippines.
