It was late.  We were tired.  We were hungry.
I had turkey stock ready done.  I had dried noodles in my pantry.  I had turkey leftovers.  It was a go.

I am having an infatuation with Tower Mas extra hot chilli sauce so I used that as part of the garnishing. Use whatever you like, sambal kicap would go nice with this, but so would just regular dried chilli flakes.

Instructions
  1. Heat your stock. Blanch your noodles as per packet instruction and place into your bowls.
  2. Crack the egg directly onto the hot noodles in your bowls. Place your bok choy to one side of your noodles. Place your cooked chicken to another side.

  3. Your stock needs to be on a rolling boil. With it still boiling, spoon it into your bowl, directly onto the egg and the bok choy to cook them all.
  4. Garnish with the condiments (go easy on the fish sauce as it is very pungent, a little goes a long way). If you've got some spring onion or cilantro garnish with those too. Finish off with a dash of white pepper, and salt if necessary . Serve hot.
